New Orleans Trinity.
What is the New Orleans Trinity? The first thing we can understand is that there are three components. In todays cooking, we use Onion, Celery, and Green Bell Pepper. There is off course the addition of the Garlic, which is called the Pope of the Trinity because of the cloves shape similar to the hat of the Pope. Great cuisine has a developed layered flavor. The Trinity is the base layer of flavor to a majority of the food cooked in South Louisiana, both Cajun & Creole.
